  • 1/2 cup (115g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup (40g) unsweetened cocoa powder
  • 1/2 cup (65g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 8 oz (225g) cream cheese, softened
  • 1/4 cup (50g) granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 cup (about 12) Oreo cookies, crushed

Instructions

  1. Preheat your oven to 350°F (175°C). Line your 9×9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a mixing bowl, whisk together the melted butter and sugar until smooth. Add the eggs and vanilla extract, then whisk until the mixture is creamy.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  4. Pour the brownie batter into your prepared pan, spreading it evenly with a spatula. Set aside.
  5. In another bowl, beat the cream cheese and sugar until smooth and creamy. Add the egg and vanilla extract, mixing until fully combined.
  6. Carefully pour the cheesecake mixture over the brownie layer, spreading it evenly to cover the entire surface.
  7. Crush the Oreo cookies using a food processor or by placing them in a zip-top bag and rolling with a rolling pin. Sprinkle the crushed Oreos over the cheesecake layer.
  8. Bake in the preheated oven for 30-35 minutes, or until the edges are set and the cheesecake layer is slightly golden. A toothpick inserted into the center should come out with a few moist crumbs.
  9. Remove from the oven and allow the brownies to cool completely in the pan. Once cooled, use the parchment paper to lift them out and slice into squares.
  10. For clean slices, chill the brownies in the fridge for at least an hour before cutting. Wipe your knife between each cut for perfect edges.
