  • 2 teaspoons pure vanilla extract
  • 1 cup (240 ml) sour cream
  • ½ cup (120 ml) milk (whole or 2%)
  • ¾ cup (about 120 grams) rainbow sprinkles (jimmies preferred)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your cake pans thoroughly and line them with parchment paper for easy removal.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Using a mixer, beat the softened butter and granulated sugar on medium speed for about 3-4 minutes until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition until the batter is smooth and glossy.
  5. Stir in the vanilla extract and sour cream until combined.
  6. Reduce mixer speed to low. Add the flour mixture in three parts, alternating with the milk, beginning and ending with the flour. Mix just until combined after each addition.
  7. Gently fold in the rainbow sprinkles using a rubber spatula, being careful not to overmix to prevent color bleeding.
  8. Divide the batter evenly between the prepared pans and smooth the tops. Tap the pans lightly on the counter to release air bubbles.
  9. Bake for 30-35 minutes for round pans or 35-40 minutes for a 9×13 inch sheet pan. Test doneness with a toothpick; it should come out clean or with a few moist crumbs.
  10. Let cakes cool in the pans for 15 minutes, then transfer to a wire rack to cool completely before frosting.
