This creamy garlic Tuscan chicken pasta combines tender chicken, luscious pasta, and a garlicky cream sauce with vibrant sun-dried tomatoes and spinach for a comforting and flavorful dish.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts, sliced into thin cutlets
  • 2 tablespoons olive oil
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 8 ounces pasta (penne, fettuccine, or spaghetti)
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Cook the pasta: In a large pot of salted water, cook your pasta according to package instructions until al dente. Drain and set aside.
  2. Prepare the chicken: Season chicken breasts generously with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook for 4-5 minutes per side or until golden brown and cooked through. Remove from skillet and set aside.
  3. Sauté the garlic: Reduce heat to medium and add a bit more olive oil if needed. Toss in the minced garlic and cook for 30 seconds until fragrant.
  4. Make the sauce: Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer, then whisk in the Parmesan cheese until melted and smooth.
  5. Add the sun-dried tomatoes and spinach: Stir in the sun-dried tomatoes and fresh spinach, letting the spinach wilt for 2-3 minutes.
  6. Combine the pasta and chicken: Add the cooked pasta to the skillet, tossing gently to coat with the creamy sauce. Slice the cooked chicken and arrange it on top of the pasta.
  7. Finish and serve: Sprinkle with extra Parmesan cheese and a pinch of red pepper flakes if desired. Serve warm and enjoy!

Notes

[‘Don’t overcook the chicken to avoid dryness.’, ‘Use freshly grated Parmesan for a smoother sauce.’, ‘Season generously for the best flavor.’, ‘Cook pasta al dente for better texture.’, ‘If the sauce thickens too much, add a splash of reserved pasta water or chicken broth.’]
