  • 10 oz (283g) mini marshmallows
  • 6 cups (144g) Rice Krispies cereal
  • 1/2 tsp sea salt flakes, plus extra for sprinkling
  • 1 tsp vanilla extract

Instructions

  1. Brown the butter: In a large saucepan, melt 1/2 cup (113g) unsalted butter over medium heat. Stir frequently as it foams and turns golden brown, about 5-7 minutes. Remove from heat immediately once browned.
  2. Add marshmallows and vanilla: Quickly stir in 10 oz (283g) mini marshmallows until fully melted and smooth, about 2-3 minutes. Stir in 1 tsp vanilla extract.
  3. Mix in cereal: Remove from heat and gently fold in 6 cups (144g) Rice Krispies cereal with 1/2 tsp sea salt flakes. Stir carefully to coat every grain without crushing.
  4. Transfer to pan: Lightly grease or line a 9×13-inch baking pan with parchment. Press the mixture firmly but gently into the pan using a buttered spatula or wax paper.
  5. Sprinkle finishing sea salt: While still warm, sprinkle a pinch of sea salt flakes on top.
  6. Cool and cut: Let the treats cool completely, about 30 minutes at room temperature. Cut into squares and serve.

Notes

Keep a close eye on the butter while browning to avoid burning. Use a buttered spatula or wax paper to press the mixture into the pan to prevent sticking. If the marshmallow mixture stiffens before mixing in cereal, gently warm it again over low heat for 15-20 seconds.
