A creamy, savory comfort food dish featuring tender chicken smothered in a luscious sauce, perfect for busy days and picky eaters.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts (cut into halves if large)
  • 1 packet dry Italian dressing mix
  • 1 can (10.5 ounces) condensed cream of chicken soup
  • 1 cup chicken broth
  • 8 ounces cream cheese, softened
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon garlic powder
  • 12 ounces hot cooked pasta (angel hair or spaghetti)

Instructions

  1. Spray your crock pot with non-stick cooking spray or line it with a disposable liner for easy cleanup.
  2. Place the chicken breasts in the bottom of the crock pot in a single layer.
  3. In a mixing bowl, whisk together the Italian dressing mix, cream of chicken soup, chicken broth, melted butter, garlic powder, and softened cream cheese until smooth and creamy.
  4. Pour the sauce mixture over the chicken, ensuring each piece is coated.
  5. Set the crock pot to low and cook for 5-6 hours, or on high for 3-4 hours. The chicken should be tender and easily shred with a fork.
  6. While the chicken is cooking, prepare your pasta according to the package instructions. Drain and set aside.
  7. Once the chicken is cooked, gently shred it using two forks and stir it into the sauce. If the sauce is too thick, you can add a splash of water or chicken broth to reach your desired consistency.
  8. Serve the chicken and sauce over the cooked pasta, garnished with freshly cracked black pepper or chopped parsley if desired.

Notes

For added flavor, sear the chicken before placing it in the crock pot. You can adapt the recipe to be gluten-free or dairy-free using substitutions mentioned in the blog.
