  • 34 pounds beef chuck roast
  • 4 cups low-sodium beef broth
  • 1 large onion, sliced
  • 34 garlic cloves, minced
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and black pepper, to taste
  • 68 French rolls or hoagie buns
  • 68 slices provolone or Swiss cheese (optional)
  • 12 tablespoons olive oil (optional, for searing)

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and black pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the roast for 3-4 minutes per side until browned all over. (Optional but recommended.)
  3. Place sliced onions and minced garlic at the bottom of the crockpot.
  4. Set the seared roast on top of the onions and garlic.
  5. Pour in beef broth, Worcestershire sauce, dried thyme, and dried rosemary around the roast, avoiding pouring directly on the meat.
  6. Cover and cook on low for 8-10 hours or on high for 4-6 hours until the roast is fork-tender.
  7. Remove the roast to a cutting board and shred with two forks, removing any large chunks of fat.
  8. Return shredded beef to the crockpot and stir to soak up the juices.
  9. Ladle the cooking liquid into a saucepan and simmer on medium heat to reduce slightly. Adjust seasoning with salt and pepper as needed.
  10. Slice rolls horizontally and pile on shredded beef. Add a slice of cheese if using, then toast under a broiler until cheese melts and rolls are lightly crisp.
  11. Serve sandwiches hot with a small bowl of au jus for dipping.

Notes

Searing the beef before slow cooking adds depth of flavor but can be skipped if short on time. To thicken au jus, mix 1 teaspoon cornstarch with 1 tablespoon cold water and stir into simmering broth. For gluten-free, use gluten-free rolls and ensure Worcestershire sauce is gluten-free. Leftovers store well in the fridge for up to 4 days or freeze for longer storage.
