  • 4 cups russet potatoes, peeled and diced into small cubes
  • 1 cup carrots, diced
  • 1 cup celery, chopped
  • 1 yellow onion, minced
  • 2 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 6 slices bacon, cooked and crumbled
  • Salt and pepper to taste
  • Optional toppings: chives, additional crispy bacon, shredded cheese, sour cream

Instructions

  1. Peel and dice the potatoes into small cubes. Dice the carrots and celery, and mince the onion and garlic.
  2. Place the potatoes, carrots, celery, onion, garlic, and chicken broth into the crockpot. Stir everything together to combine.
  3. Cover the crockpot and cook on low for 6-8 hours, or until the potatoes and vegetables are tender and easily mashable.
  4. Use an immersion blender to blend the soup until smooth. For a chunkier texture, blend about half the soup and leave the rest as is.
  5. Stir in the milk, heavy cream, cream cheese, and shredded cheddar cheese. Mix until everything is melted and fully incorporated.
  6. Cook the bacon in a frying pan until crispy. Crumble into small pieces.
  7. Taste the soup and add salt and pepper as needed. Ladle into bowls and top with crispy bacon, chives, and extra shredded cheese. Enjoy!
