  • 1/2 teaspoon salt
  • 1 cup (175g) semi-sweet chocolate chips or chunks (optional)
  • 1 1/2 cups (180g) powdered sugar
  • 23 tablespoons milk or dairy-free milk
  • 1 teaspoon vanilla extract
  • Gel food coloring in red, orange, yellow, green, blue, and purple

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar and 1/2 cup packed brown sugar until light and fluffy, about 3-4 minutes with an electric mixer.
  3. Add 2 large eggs one at a time, beating well after each addition. Stir in 1 teaspoon vanilla extract.
  4. In a separate bowl, whisk 2 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt. Slowly add this dry mix to the wet ingredients, mixing just until combined.
  5. Gently fold in 1 cup semi-sweet chocolate chips or chunks.
  6. Using a spoon or small cookie scoop, drop heaping tablespoons of dough onto prepared baking sheets, spacing about 2 inches apart.
  7. Bake for 10-12 minutes, until edges are golden but centers remain soft.
  8. Let clusters rest on the baking sheet for 5 minutes, then transfer to cooling racks.
  9. While clusters bake and cool, mix 1 1/2 cups powdered sugar with 2-3 tablespoons milk and 1 teaspoon vanilla extract to form a thick but pourable glaze. Divide glaze evenly into six small bowls.
  10. Add gel food coloring to each bowl to create red, orange, yellow, green, blue, and purple glazes.
  11. Use forks or small spoons to drizzle each colored glaze over cooled cookie clusters in rainbow stripes.
  12. Allow the drizzle to harden at room temperature for about 30 minutes before serving or storing.

Notes

Use unsalted butter to control saltiness. Gel food coloring provides vibrant colors without thinning the glaze. For gluten-free, substitute all-purpose flour with a 1:1 gluten-free baking blend. Do not overmix dough to keep clusters tender. Cool clusters completely before drizzling to prevent melting the glaze. If glaze is too thick, add milk; if too thin, add powdered sugar.
