Ingredients

Scale
  • 1 ½ cups (190 g) all-purpose flour, sifted
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons baking powder
  • ¼ teaspoon salt
  • 2 large eggs, room temperature
  • 1 cup (240 ml) milk, whole or 2%
  • 4 tablespoons (60 g) unsalted butter, melted and slightly cooled
  • 1 teaspoon vanilla extract
  • ½ teaspoon ground cinnamon (optional)
  • 1 ½ cups (225 g) mixed berries (blueberries, raspberries, strawberries), fresh or frozen
  • 1 tablespoon powdered sugar
  • 1 teaspoon lemon zest
  • Maple syrup or honey, for drizzling (optional)
  • Powdered sugar, for dusting (optional)
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Preheat your waffle iron and lightly grease the surface with non-stick spray or melted butter.
  2. In a medium bowl, whisk together sifted flour, sugar, baking powder, salt, and ground cinnamon if using.
  3. In another bowl, beat eggs until light and fluffy. Add milk, melted butter, and vanilla extract; whisk until smooth.
  4. Pour wet ingredients into dry ingredients and stir gently until just combined; do not overmix.
  5. In a small bowl, toss mixed berries with powdered sugar and lemon zest.
  6. Fold half of the berry mixture gently into the batter, reserving the rest for topping.
  7. Spoon batter into each heart-shaped mold of the waffle iron about ¾ full. Add a few reserved berries on top.
  8. Cook waffles for 3-5 minutes until golden brown and crisp on the edges.
  9. Remove waffles carefully and place on a cooling rack to keep crisp.
  10. Repeat with remaining batter and berries, greasing the waffle iron as needed.
  11. Serve warm with maple syrup or honey drizzle, dust with powdered sugar, and garnish with fresh mint leaves.

Notes

Ensure waffle iron is fully heated before cooking to avoid soggy waffles. Do not overmix batter to keep waffles tender. Fold berries gently to maintain their shape. Cooling waffles on a rack keeps them crisp. For gluten-free or dairy-free options, substitute flour and milk accordingly. Leftovers can be stored in the fridge for up to 2 days and reheated in toaster or oven for best texture.
