Irresistible Grilled Corn with Cilantro Lime Butter

A quick and easy grilled corn recipe featuring a zesty cilantro lime butter that adds a fresh, vibrant twist to a classic summer BBQ side dish.

  • 4 ears fresh corn on the cob, husks removed
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons fresh cilantro, finely chopped
  • 1 tablespoon fresh lime juice (about half a lime)
  • 1 teaspoon lime zest
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • Olive oil or cooking spray for brushing the corn

Instructions

  1. Preheat your grill to medium-high heat, about 375–450°F (190–230°C). If using a grill pan, heat it over medium-high on your stove.
  2. In a small bowl, combine softened butter, chopped cilantro, fresh lime juice, lime zest, garlic powder (if using), salt, and black pepper. Mix until smooth and well incorporated. Adjust seasoning to taste.
  3. Remove husks and silk from each ear of corn. Lightly brush each ear with olive oil or spray with cooking spray to prevent sticking.
  4. Place corn directly on the grill grates. Turn every 2–3 minutes to ensure even charring and cooking on all sides. Grill for about 10–15 minutes until kernels are tender and have golden brown char spots.
  5. Remove the grilled corn from heat and immediately slather the cilantro lime butter all over each ear while still hot, allowing it to melt into the corn.
  6. Optionally sprinkle with extra toppings such as cotija cheese, chili powder, or chopped green onions. Serve warm.

Notes

For a dairy-free version, substitute butter with plant-based alternatives like vegan butter or coconut oil. To prep ahead, make the cilantro lime butter in advance and keep chilled; bring to room temperature before use. Avoid salting corn before grilling to prevent drying out kernels. Turn corn frequently for even cooking and grill marks. Leftovers can be stored in the refrigerator for up to 2 days and reheated gently.
