Irresistible Honey-Cinnamon Oatmeal Bread

  • 1 cup (90g) old-fashioned rolled oats
  • 1 cup (240ml) milk
  • 1 cup (125g) all-purpose flour
  • 1 cup (120g) whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 cup (60g) unsalted butter, softened
  • 1/3 cup (80ml) honey
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: 1/4 cup (30g) raisins or chopped nuts

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper.
  2. In a large bowl, combine 1 cup (90g) of rolled oats with 1 cup (240ml) of milk. Let it sit for 10 minutes to soften.
  3. In a medium bowl, whisk together 1 cup (125g) of all-purpose flour, 1 cup (120g) of whole wheat flour, 1 teaspoon of baking powder, 1/2 teaspoon of baking soda, 1 teaspoon of ground cinnamon, and 1/2 teaspoon of salt.
  4. In the bowl with the soaked oats, add 1/4 cup (60g) of softened unsalted butter, 1/3 cup (80ml) of honey, 2 large eggs, and 1 teaspoon of vanilla extract. Stir until smooth.
  5. Gradually fold the dry mixture into the wet ingredients using a wooden spoon or spatula. Mix just until combined—avoid overmixing.
  6. If desired, fold in 1/4 cup (30g) of raisins or chopped nuts.
  7. Transfer the batter into your prepared loaf pan. Smooth the top with a spatula.
  8. Place the pan in the oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
