  • 2 cups cooked and shredded chicken breast or rotisserie chicken
  • 45 fresh jalapeños, diced
  • 68 slices of cooked bacon, crumbled
  • 4 cups chicken broth (low-sodium preferred)
  • 8 ounces cream cheese, softened
  • 1 ½ cups shredded cheddar cheese (sharp cheddar preferred)
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 2 tablespoons butter
  • Salt to taste
  • Black pepper to taste
  • Paprika to taste
  • Garlic powder to taste
  • Optional toppings: sour cream, green onions, shredded cheese, tortilla strips

Instructions

  1. Cook the bacon in a large pot over medium heat until crispy. Remove the bacon and set aside, leaving about 1 tablespoon of the bacon grease in the pot.
  2. Add the butter to the pot and melt it over medium heat. Toss in the diced onion and minced garlic, sautéing for about 3-4 minutes until softened and fragrant.
  3. Add the diced jalapeños to the pot. Sauté for another 2-3 minutes, letting the heat of the jalapeños release its aroma. Remove seeds for less heat if desired.
  4. Pour in the chicken broth and bring the mixture to a gentle simmer. Let it simmer for about 10 minutes to allow the flavors to meld.
  5. Lower the heat, and whisk in the softened cream cheese until fully melted and combined with the broth. It should look creamy and smooth.
  6. Stir in the shredded chicken, heavy cream, and shredded cheddar cheese. Cook for another 5-7 minutes until the cheese has melted and the soup is thickened.
  7. Season the soup with salt, pepper, paprika, and garlic powder to taste. Adjust the spice level by adding more jalapeños or paprika.
  8. Crumble the cooked bacon and stir half of it into the soup. Reserve the other half for topping.
  9. Serve the soup hot, topped with the reserved bacon, a dollop of sour cream, chopped green onions, or extra shredded cheese.
