  • 1 ¼ cups (160 g) all-purpose flour
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • ¾ cup (170 g) unsalted butter, melted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 1 cup (240 ml) freshly squeezed lemon juice (about 45 lemons)
  • 1 tbsp lemon zest (from 12 lemons)
  • 1 can (14 oz or 400 g) sweetened condensed milk
  • 2 large egg yolks

Instructions

  1. Preheat the oven to 350°F (175°C). Line the baking pan with parchment paper for easy cleanup.
  2. In a large bowl, mix together the oats, flour, granulated sugar, brown sugar, and salt. Pour in the melted butter and vanilla extract, stirring until evenly combined. The mixture should resemble wet sand.
  3. Reserve about 1 cup of the crumble mixture for the topping. Press the remaining mixture firmly into the bottom of the baking pan to form the crust. Bake for 10 minutes, then set aside.
  4. In a medium bowl, whisk together the lemon juice, lemon zest, sweetened condensed milk, and egg yolks until smooth and creamy.
  5. Pour the lemon filling over the baked crust, spreading it out evenly. Sprinkle the reserved crumble mixture on top.
  6. Return the pan to the oven and bake for 25-30 minutes, or until the topping is golden brown and the filling is set.
  7. Allow the bars to cool completely in the pan before slicing. For cleaner cuts, refrigerate for 1-2 hours before serving.
