  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil (or melted coconut oil)
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ¼ cup (50g) granulated sugar
  • 1 ½ tsp ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini loaf pans with non-stick spray or butter, and set them aside.
  2. In a medium-sized bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves until evenly combined.
  3. In a separate large bowl, mix the sugar, vegetable oil, pumpkin puree, eggs, and vanilla extract until smooth. Make sure there are no lumps in the pumpkin puree.
  4. Gradually add the dry ingredients into the wet ingredients, folding gently with a spatula until just combined. Be careful not to overmix, as it can make the bread dense.
  5. In a small bowl, combine the granulated sugar and cinnamon for the swirl.
  6. Fill each mini loaf pan halfway with the pumpkin batter. Sprinkle a generous layer of the cinnamon-sugar mixture over the batter, then top with the remaining batter. Use a knife or skewer to gently swirl the batter for a marbled effect.
  7. Place the mini loaf pans on a baking sheet and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the breads cool in their pans for 10 minutes before transferring to a wire rack to cool completely.
