  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 1 cup (240g) pumpkin puree
  • ½ cup (100g) granulated sugar
  • ½ cup (110g) brown sugar
  • ½ cup (120ml) vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp granulated sugar
  • 1 tsp cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your mini loaf pans or line them with parchment paper.
  2. In a mixing bowl, whisk together all-purpose flour, baking soda, salt, ground cinnamon, and ground nutmeg.
  3. In a separate bowl, whisk together pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract until smooth.
  4. Gradually fold the dry ingredients into the wet mixture using a spatula. Be careful not to overmix—stop when just combined.
  5. In a small bowl, mix granulated sugar with cinnamon to create the cinnamon sugar mixture.
  6. Pour half of the batter into the mini loaf pans, sprinkle a generous amount of the cinnamon sugar mixture, and then add the remaining batter on top. Use a knife to gently swirl the layers.
  7. Place the pans in the oven and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the loaves cool in the pans for 10 minutes before transferring them to a wire rack. Serve warm or at room temperature.
