  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract

  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 to 1.5 teaspoons mint extract
  • 1.5 cups (270g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, beat the softened butter with granulated sugar and brown sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, then add the vanilla extract, mixing until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed or folding gently until just combined. Avoid overmixing.
  6. Stir in the mint extract, starting with 1 teaspoon and adjusting to taste.
  7. Fold in the chocolate chips gently until evenly distributed.
  8. Spread the dough evenly in the prepared baking pan, pressing down slightly.
  9. Bake for 30-35 minutes until edges are golden brown and a toothpick inserted in the center comes out with a few moist crumbs.
  10. Cool completely in the pan on a wire rack for at least 30 minutes to allow the crust to firm up.

Notes

For a gluten-free version, substitute all-purpose flour with a gluten-free blend and add 1 teaspoon xanthan gum if needed. For dairy-free, use coconut oil instead of butter and dairy-free chocolate chips. To get a crisp crust, cream butter and sugars thoroughly and use a metal pan if possible. Let bars cool completely before slicing to avoid crumbling. If chocolate chips sink, chill dough for 15 minutes before baking.
