Irresistible Pancake Poppers

These bite-sized pancake poppers are fluffy, delicious, and perfect for breakfast, snack time, or even dessert. Quick and easy to make, they’re a fun twist on classic pancakes.

Ingredients

  • 1 cup (125g) all-purpose flour
  • 1 teaspoon baking powder
  • 1 tablespoon granulated sugar
  • Pinch of salt
  • 3/4 cup (180ml) milk
  • 1 large egg
  • 2 tablespoons (30g) unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • Optional mix-ins: 1/4 cup chocolate chips, blueberries, chopped nuts, or sprinkles

Instructions

  1. Preheat your oven to 375°F (190°C) and grease your mini muffin pan with cooking spray or melted butter.
  2. In a large bowl, whisk together the flour, baking powder, sugar, and salt.
  3. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Gradually pour the wet ingredients into the dry ingredients while whisking. Mix until just combined; a few lumps are okay.
  5. Fold in your choice of mix-ins, such as chocolate chips, blueberries, or chopped nuts.
  6. Use an ice cream scoop or spoon to evenly distribute the batter into the greased mini muffin cups, filling each about 3/4 full.
  7. Bake for 10-12 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  8. Allow the pancake poppers to cool in the pan for 5 minutes before transferring them to a wire rack.

Notes

Don’t overmix the batter to keep the poppers light and fluffy. Use room temperature ingredients for a smoother batter. If using frozen fruit, toss them in a bit of flour before adding to the batter to prevent sinking.
