Ingredients

Scale
  • 1 batch or about 1 lb (450g) pizza dough (store-bought or homemade)
  • ½ cup (120ml) pizza sauce or marinara
  • 2025 pepperoni slices (regular or turkey, nitrate-free optional)
  • 1½ cups (170g) shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese (optional)
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • 1 tablespoon olive oil (for brushing)
  • ½ teaspoon garlic powder
  • Flour for dusting work surface
  • Optional extras: red pepper flakes, chopped fresh basil, sliced black olives

Instructions

  1. If using store-bought dough, let it come to room temperature for about 20 minutes; if homemade, have it rested and pliable.
  2. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Lightly flour your work surface and roll dough into a 12×14 inch (30×35 cm) rectangle about ¼ inch (6 mm) thick.
  4. Spread ½ cup (120ml) pizza sauce evenly over dough, leaving a ½ inch (1.25 cm) border.
  5. Arrange pepperoni slices evenly over sauce, then sprinkle 1½ cups shredded mozzarella and 2 tablespoons grated Parmesan if using.
  6. Sprinkle 1 teaspoon Italian seasoning and ½ teaspoon garlic powder over the cheese.
  7. Roll dough tightly from the long edge closest to you, tucking and sealing the edge with water or olive oil if needed.
  8. Slice the rolled log into 1-inch (2.5 cm) thick pinwheels, yielding about 12-14 pieces.
  9. Place pinwheels cut side up on the baking sheet, spacing about 1 inch (2.5 cm) apart.
  10. Brush tops lightly with olive oil for a golden crust.
  11. Bake at 400°F (200°C) for 15-18 minutes until cheese is bubbly and edges are golden brown, checking from 12 minutes to avoid burning.
  12. Let pinwheels cool for 5 minutes before serving.

Notes

Use freshly shredded mozzarella for better melting. Roll dough evenly to ensure uniform cooking. Brush with olive oil for a golden crust. Check oven early to prevent burning. Pinwheels can be frozen before or after baking. Serve warm or at room temperature with dipping sauces like marinara or ranch.
