Irresistible Pizza Pot Pies

A fun twist on classic pizza flavors, these personal-sized pot pies feature gooey cheese, hearty marinara sauce, and a golden, flaky crust – perfect for cozy evenings or family dinners.

Ingredients

  • Pizza Dough (store-bought or homemade)
  • Marinara Sauce
  • Shredded Mozzarella Cheese
  • Pepperoni
  • Bell Peppers (red, green, yellow, or orange)
  • Mushrooms (button or baby bella)
  • Onion (small, diced)
  • Italian Seasoning (oregano, basil, thyme)
  • Olive Oil
  • Salt & Pepper
  • Grated Parmesan Cheese (optional)

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease your ramekins or oven-safe bowls.
  2. Roll out your pizza dough on a lightly floured surface until it’s about 1/8-inch thick. Cut out circles slightly larger than your ramekins to allow for overlap. Set aside.
  3. Heat 1 tablespoon of olive oil in a small saucepan over medium heat. Add the diced onion, bell peppers, and mushrooms, and sauté for 5-7 minutes until softened. Stir in the marinara sauce, Italian seasoning, and a pinch of salt and pepper. Simmer for another 5 minutes.
  4. Divide the marinara mixture evenly among the ramekins. Add a handful of shredded mozzarella cheese and a few slices of pepperoni to each. If desired, sprinkle a little grated parmesan on top for extra flavor.
  5. Lay the pizza dough circles over the ramekins, pressing gently to seal the edges. Use a knife to make a small slit in the middle of each dough top to allow steam to escape.
  6. Using a pastry brush, lightly coat the dough tops with olive oil for a golden finish.
  7. Place the ramekins on a baking sheet and bake for 20-25 minutes, or until the crust is golden brown and puffed.
  8. Let the pot pies rest for 5 minutes before serving – they’ll be piping hot!
