  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • ¾ cup (95g) all-purpose flour
  • ½ cup (100g) brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ¼ cup (60g) unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9-inch baking pan or line it with parchment paper.
  2. In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt. Add the melted butter, egg, milk, and vanilla extract. Mix until combined and smooth. Spread the batter evenly into the prepared pan.
  3. In another bowl, combine the pumpkin puree, brown sugar, egg, cinnamon, nutmeg, cloves, salt, and vanilla extract. Whisk until smooth. Pour the pumpkin mixture over the coffee cake base, spreading evenly.
  4. In a small bowl, mix the flour, brown sugar, cinnamon, and salt. Add the cubed butter and use a pastry cutter or your fingers to work it into the mixture until it resembles coarse crumbs.
  5. Sprinkle the crumble mixture evenly over the pumpkin layer.
  6. Bake for 40-45 minutes, or until the crumble topping is golden brown and a toothpick inserted into the center comes out clean.
  7. Let the bars cool completely in the pan before cutting into squares. Serve at room temperature or slightly warm.
