  • 1 ¾ cups (220g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • ¾ cup (150g) granulated sugar
  • ½ cup (120ml) vegetable oil or melted butter
  • 2 large eggs, room temperature
  • 1 cup (240g) pumpkin puree (not pumpkin pie filling)
  • 1 tsp vanilla extract
  • ⅓ cup (80ml) milk (use dairy-free milk if preferred)
  • ⅓ cup (70g) brown sugar
  • 2 tbsp all-purpose flour
  • ¼ tsp cinnamon
  • 2 tbsp unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or spray with non-stick spray.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  3. In a medium bowl, whisk together sugar, oil, eggs, pumpkin puree, vanilla, and milk until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, gently folding until just combined. Do not overmix.
  5. In a small bowl, combine brown sugar, flour, and cinnamon. Use a fork to work the butter into the mixture until it forms coarse crumbs.
  6. Divide the batter evenly between the muffin cups, filling each about ¾ full. Sprinkle the crumble generously over the top of each muffin.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely. Enjoy warm or at room temperature.
