  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 1/4 cup (50g) brown sugar (streusel topping)
  • 1/4 cup (30g) all-purpose flour (streusel topping)
  • 2 tbsp (28g) unsalted butter, melted (streusel topping)
  • 1/2 tsp ground cinnamon (streusel topping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line the muffin tin with paper liners or lightly grease each cup.
  2. Prepare the streusel topping by mixing brown sugar, flour, melted butter, and cinnamon in a small bowl until crumbly. Set aside.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.
  4. In a large bowl, combine pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 3/4 full.
  7. Sprinkle the streusel topping generously over each muffin, pressing lightly to adhere.
  8. Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
