  • Frozen pot stickers (vegetable, pork, or chicken)
  • 23 tablespoons red curry paste
  • 1 can (400ml) full-fat coconut milk
  • 4 cups (1 liter) chicken broth or vegetable broth
  • 1 tablespoon oil
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 cup bell peppers, sliced
  • 1 cup carrots, sliced
  • 1 cup spinach
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat a large pot over medium heat and add a tablespoon of oil. Sauté the minced garlic and grated ginger for about 1 minute, until fragrant.
  2. Add 2-3 tablespoons of red curry paste to the pot and stir it into the garlic and ginger. Cook for 2 minutes to allow the flavors to bloom.
  3. Pour in one can (400ml) of coconut milk and 4 cups (1 liter) of chicken broth. Stir until the curry paste is fully incorporated into the liquid.
  4. Add your vegetables to the pot, starting with firmer veggies like carrots and bell peppers. Cook them for about 5 minutes.
  5. Drop in your frozen pot stickers, making sure they’re submerged in the liquid. Let them simmer for 8-10 minutes, or until they’re fully cooked through.
  6. Season the soup with 1 tablespoon of soy sauce and 1 teaspoon of sugar. Taste and adjust as needed.
  7. Turn off the heat and stir in a splash of lime juice for brightness.
  8. Serve hot, garnished with fresh cilantro and additional lime wedges if desired.
