This irresistible Reuben bake combines the flavors of the classic deli sandwich into a warm, cheesy casserole perfect for family dinners or potlucks.

Ingredients

  • Rye bread, cut into cubes
  • Corned beef, thinly sliced or chopped
  • Sauerkraut, drained
  • Swiss cheese, shredded
  • Thousand Island dressing
  • Butter, melted
  • Caraway seeds (optional)
  • Salt
  • Black pepper

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish lightly with butter or cooking spray.
  2. In a large bowl, toss the rye bread cubes with melted butter, caraway seeds (if using), and a pinch of salt. Spread half of the bread cubes evenly across the bottom of the baking dish.
  3. Add half of the corned beef, followed by half of the sauerkraut, and sprinkle half of the shredded Swiss cheese on top.
  4. Drizzle half of the Thousand Island dressing over the layered ingredients.
  5. Repeat the layers with the remaining bread cubes, corned beef, sauerkraut, cheese, and Thousand Island dressing, finishing with a sprinkle of black pepper.
  6. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  7. Let the casserole rest for 5 minutes before serving.

Notes

For extra crispy texture, toast the bread cubes in the oven for 5-7 minutes before assembling. Ensure sauerkraut is well-drained to avoid a soggy casserole.
