  • 1 cup (200g) granulated sugar
  • 1 cup (220g) light brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (50g) mini marshmallows
  • 1 cup (175g) semisweet chocolate chunks
  • 1/2 cup (60g) chopped nuts (walnuts or pecans)
  • 1/2 cup (60g) crushed graham crackers

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large mixing bowl, cream together unsalted butter, granulated sugar, and light brown sugar until light and fluffy (2-3 minutes).
  3. Add the egg and vanilla extract to the mixture and beat until well combined.
  4. In a separate bowl, whisk together all-purpose flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Gently fold in mini marshmallows, semisweet chocolate chunks, chopped nuts, and crushed graham crackers.
  7. Use a tablespoon or cookie scoop to portion out the dough onto the prepared baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes or until the edges are lightly golden and the centers are slightly soft.
  9. Let the cookies cool on the baking sheets for 5-7 minutes, then transfer them to a wire rack to cool completely.
