  • 2 teaspoons vanilla extract
  • ½ cup (120ml) sour cream
  • ½ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • 2 tablespoons heavy cream (or milk)
  • 1 teaspoon vanilla extract
  • Food coloring (optional)
  • Pastel sprinkles (or any sprinkles of your choice)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a medium-sized mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  3. In a large mixing bowl, use an electric mixer to beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Beat in the egg, vanilla extract, and sour cream. Mix until smooth and well incorporated.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed. The dough will be soft and slightly sticky.
  6. Scoop out tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheets, leaving about 2 inches of space between each cookie.
  7. Bake for 12-14 minutes, or until the edges are set but the centers still look soft. Don’t overbake.
  8. Transfer the cookies to a cooling rack and let them cool completely before frosting.
  9. While the cookies cool, beat the softened butter with an electric mixer until creamy. Gradually add the powdered sugar, followed by the heavy cream and vanilla extract. Continue mixing until smooth and fluffy. Add food coloring if desired.
  10. Use a spatula to spread the frosting onto the cooled cookies. Sprinkle with pastel sprinkles for a fun, colorful finish.
