  • 2 pints (approximately 900 grams) fresh strawberries, hulled and halved if large
  • 1 cup (240 ml) sparkling rosé (dry but fruity, e.g., La Marca or Whispering Angel)
  • 4 ounces (115 grams) cream cheese or mascarpone
  • 2 tablespoons (30 ml) raw or wildflower honey
  • A small handful fresh mint leaves, roughly chopped
  • 1/4 cup (30 grams) almonds or pistachios, toasted and roughly chopped
  • 1 cup (100 grams) crackers or baguette slices, lightly toasted if using baguette
  • Optional: dark chocolate shavings, edible flowers, or a splash of lemon zest

Instructions

  1. Rinse and gently dry 2 pints (900 g) of fresh strawberries. Hull them by removing the green tops, then halve or quarter larger berries so they’re bite-sized.
  2. Place the strawberries in a large mixing bowl and pour 1 cup (240 ml) of sparkling rosé over them. Toss gently to coat. Let them soak for 15-20 minutes in the fridge. Do not soak longer than 30 minutes to avoid mushiness.
  3. While the berries soak, take 4 ounces (115 g) of cream cheese or mascarpone out of the fridge to soften slightly. Whip with a fork if desired for a fluffier texture.
  4. Toast 1/4 cup (30 g) of almonds or pistachios in a dry skillet over medium heat for 3-5 minutes until fragrant and golden, stirring frequently. Let cool.
  5. Arrange about 1 cup (100 g) of crackers or baguette slices on your serving board. Toast baguette slices lightly for extra crunch if using.
  6. Drain the strawberries from the rosé, reserving a little liquid for drizzling if desired. Arrange the berries in clusters on the board, followed by dollops of softened cheese. Fill in gaps with toasted nuts and crackers.
  7. Drizzle 2 tablespoons (30 ml) of honey over the cheese and berries. Sprinkle chopped fresh mint leaves on top. Add optional lemon zest or dark chocolate shavings for extra flair.
  8. Serve immediately or cover loosely with plastic wrap and refrigerate for up to an hour before serving.

Notes

Do not soak strawberries longer than 30 minutes to avoid mushiness. Keep cheese at room temperature for easier spreading. Toast nuts carefully to avoid burning. Assemble board shortly before serving to keep crackers crisp. For dairy-free, substitute cream cheese with coconut-based spread or almond ricotta. Fresh strawberries are preferred over frozen for best texture.
