  • 4 ounces cream cheese, softened
  • 2 tablespoons sour cream
  • 1 clove garlic, minced
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1 1/2 cups shredded cheese (mozzarella and Parmesan mix)
  • Optional: Red pepper flakes, chopped artichoke hearts (1/2 cup), fresh herbs like parsley or dill

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a mixing bowl, combine chopped spinach, softened cream cheese, sour cream, minced garlic, onion powder, salt, and pepper. Mix until well incorporated. Taste and adjust seasoning if needed.
  3. In a separate bowl, mix the mozzarella and Parmesan cheese together. Reserve about 1/2 cup for topping later.
  4. Scoop a tablespoon of the spinach dip mixture and place it onto the prepared baking sheet. Flatten slightly into small discs (about 2 inches wide).
  5. Sprinkle the reserved shredded cheese evenly over each spinach dip disc.
