Irresistible St. Patrick’s Lucky Green Chocolate Loaf

A festive and moist chocolate loaf with a playful green hue, perfect for St. Patrick’s Day celebrations or any special occasion. Easy to make with simple pantry ingredients and a delightful twist of spinach or matcha powder.

  • 2 cups (240g) all-purpose flour
  • ½ cup (50g) unsweetened cocoa powder
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 cup (200g) granulated sugar
  • ½ cup (120ml) vegetable oil (can substitute with melted coconut oil)
  • 2 large eggs, room temperature
  • ¾ cup (180ml) buttermilk (or yogurt thinned with milk)
  • 1 tsp vanilla extract
  • 2 tbsp spinach powder or matcha powder
  • ½ cup (90g) mini chocolate chips (optional)
  • ¼ cup (30g) powdered sugar (for dusting)
  • Green sprinkles (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan with butter or line it with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Stir in the spinach powder or matcha powder evenly into the dry ingredients.
  4. In a separate bowl, whisk together the sugar and vegetable oil until well combined.
  5. Add eggs one at a time to the wet mixture, beating after each addition.
  6. Stir in the buttermilk and vanilla extract.
  7. Pour the wet ingredients into the dry ingredients and gently fold together using a spatula. Do not overmix; a few lumps are okay.
  8. Fold in the mini chocolate chips gently.
  9. Pour the batter into the prepared loaf pan, smooth the top, and tap the pan gently to release air bubbles.
  10. Bake for 50-60 minutes. Check at 50 minutes with a toothpick; if it comes out clean or with a few moist crumbs, it’s done. If not, bake for additional 5-10 minutes, checking frequently.
  11. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  12. Once cooled, dust with powdered sugar and sprinkle green sprinkles if desired. Slice and serve.

Notes

If the loaf browns too quickly, tent loosely with foil halfway through baking. Letting the loaf rest overnight wrapped in foil enhances the flavors. For gluten-free, substitute flour with a 1:1 gluten-free blend and add an extra egg if needed. For vegan, replace eggs with flax eggs, use plant-based milk, and swap oil with melted coconut oil.
