  • 1 teaspoon vanilla extract
  • 1 cup (170 g) white chocolate chips
  • ½ cup (113 g) unsalted butter, softened (for frosting)
  • 2 cups (240 g) powdered sugar, sifted
  • 23 tablespoons (3045 ml) milk or cream
  • ½ teaspoon peppermint extract
  • A few drops green food coloring (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on two sides.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, whisk the melted butter and granulated sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. Gradually fold the dry ingredients into the wet ingredients using a rubber spatula until just combined.
  5. Fold in the white chocolate chips gently to distribute evenly.
  6. Spread the batter evenly into the prepared pan.
  7. Bake for 25-30 minutes until edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  8. Cool completely on a wire rack (about 45 minutes).
  9. To make the frosting, beat softened butter until creamy. Gradually add powdered sugar alternating with milk or cream until smooth and spreadable.
  10. Stir in peppermint extract and green food coloring if using. Adjust consistency as needed.
  11. Spread frosting evenly over the cooled bars.
  12. Chill for at least 30 minutes to set the frosting.
  13. Cut into 12-16 squares using a warm knife for clean edges.

Notes

Do not frost bars while warm to prevent frosting from melting. Use room temperature eggs for better batter consistency. For cleaner slices, use a warm knife and wipe between cuts. Avoid overmixing the batter to keep bars tender. Chilling frosted bars before slicing improves presentation and texture.
