Irresistible St Patrick’s Mint Marshmallow Confetti Bars

These mint marshmallow confetti bars are a quick, easy, and festive treat with a refreshing hint of mint and colorful marshmallow pops, perfect for St. Patrick’s Day or any celebration.

  • 1/2 cup (113g) unsalted butter, melted
  • 4 cups (about 120g) mini marshmallows
  • 1 cup (about 30g) confetti marshmallows
  • 1 teaspoon peppermint extract
  • A few drops green food coloring (optional)
  • Pinch of salt
  • Non-stick cooking spray or parchment paper for lining pan

Instructions

  1. Line a 9×9-inch baking pan with parchment paper, leaving an overhang on two sides. Lightly spray the parchment with non-stick cooking spray. (5 minutes)
  2. In a microwave-safe bowl, combine melted butter and mini marshmallows. Microwave in 30-second intervals, stirring after each, until melted and smooth. Alternatively, melt using a double boiler over simmering water. (4-6 minutes)
  3. Remove from heat and stir in peppermint extract, salt, and green food coloring if using. Mix until color is even. (1-2 minutes)
  4. Quickly fold in confetti marshmallows, reserving a small handful for topping. (1-2 minutes)
  5. Pour mixture into prepared pan and press evenly and firmly with a buttered spatula or wax paper. Avoid pressing too hard. (3-5 minutes)
  6. Sprinkle reserved confetti marshmallows on top and gently press them into the surface. (1 minute)
  7. Let bars cool completely at room temperature for at least 1 hour, or chill in the fridge for 30 minutes. (1 hour or 30 minutes chilled)
  8. Lift bars out using parchment overhang and cut into squares or rectangles with a sharp knife, wiping the knife between slices for clean cuts. (5 minutes)

Notes

Use fresh mini marshmallows for best texture. Work quickly when mixing and pressing as marshmallows set fast. Use a hot knife for clean cutting. For dairy-free, substitute butter with coconut oil and use vegan marshmallows and peppermint oil. Optional add-ins include chocolate chips, crushed peppermint candies, or nuts. Bars can be stored airtight at room temperature for 3 days or frozen for up to a month.
