Irresistible St. Patrick’s Shamrock Mint Parfait Cups

A fresh and festive parfait combining mint whipped cream, crunchy chocolate cookie layers, and creamy vanilla pudding, perfect for spring celebrations and St. Patrick’s Day.

Ingredients

  • 1 ½ cups (360 ml) heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure mint extract
  • ¼ teaspoon green food coloring or matcha powder (optional)
  • About 12 chocolate sandwich cookies, crushed
  • ½ cup (90 g) mini chocolate chips
  • 1 cup (240 ml) vanilla pudding or custard
  • Optional garnishes: fresh mint leaves, shaved white chocolate, or coconut flakes

Instructions

  1. Chill mixing bowl and beaters in freezer for 10 minutes.
  2. Pour heavy whipping cream into chilled bowl. Add powdered sugar, mint extract, and optional green food coloring or matcha powder.
  3. Beat on medium-high speed until soft peaks form, being careful not to overbeat.
  4. Place chocolate sandwich cookies in a zip-top bag and crush coarsely with a rolling pin or pulse 5-6 times in a food processor.
  5. Mix crushed cookies with mini chocolate chips and set aside.
  6. Prepare vanilla pudding or custard if homemade, or stir store-bought pudding.
  7. Spoon about 2 tablespoons of vanilla pudding into the bottom of each serving cup.
  8. Add a layer of the crushed cookie and chocolate chip mixture (about 2 tablespoons per cup).
  9. Gently spoon or pipe mint whipped cream over the crunchy layer, filling each cup about halfway.
  10. Repeat layers if cups are tall enough, finishing with a dollop of mint whipped cream on top.
  11. Garnish with fresh mint leaves, shaved white chocolate, or coconut flakes if desired.
  12. Chill parfait cups in the refrigerator for at least 30 minutes before serving.

Notes

Chill equipment before whipping cream for best results. Avoid overbeating whipped cream to prevent turning it into butter. Assemble parfaits just before serving for freshest texture. Can be made dairy-free or gluten-free with substitutions. Prepare components ahead but assemble just before serving. Not recommended to freeze.
