  • ½ cup (115g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • ½ cup (120ml) whole milk
  • ¼ cup (60ml) sour cream
  • ½ cup (100g) granulated sugar
  • ½ cup (115g) unsalted butter
  • 2 tbsp water
  • Pinch of salt
  • 1 cup (230g) unsalted butter, softened
  • 2 ½ cups (300g) powdered sugar
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy (about 2-3 minutes).
  4. Beat in the eggs one at a time, followed by the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk and sour cream. Start and end with the dry ingredients. Mix just until combined.
  6. Fill each cupcake liner about ¾ full with batter. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely on a wire rack.
  7. In a small saucepan, combine the sugar, butter, water, and salt. Cook over medium heat, stirring constantly, until the mixture turns a golden amber color (about 10 minutes). Pour onto a parchment-lined baking sheet and let it harden. Once cooled, break it into small pieces.
  8. Beat the softened butter until creamy. Gradually add powdered sugar, mixing until smooth. Add vanilla, heavy cream, and salt, and beat until fluffy.
  9. Pipe or spread the frosting onto the cooled cupcakes. Sprinkle the toffee pieces generously over the top.
