Irresistible Triple Chocolate Swirl Cupcakes

  • 1 cup (120g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 1/3 cup (30g) unsweetened cocoa powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup (120ml) whole milk (room temperature)
  • 1/4 cup (60ml) vegetable oil
  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 1/4 cup (60ml) hot water
  • 1/4 cup (40g) milk chocolate chips (melted)
  • 1/4 cup (40g) dark chocolate chips (melted)
  • 1/4 cup (40g) white chocolate chips (melted)
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (90g) dark chocolate chips
  • Chocolate shavings (optional)
  • Sprinkles (optional)
  • Mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large mixing bowl, whisk together the flour, granulated sugar, brown sugar, cocoa powder, baking soda, and salt.
  3. In a separate bowl, mix the milk, vegetable oil, egg, and vanilla extract until smooth. Gradually add the wet mixture to the dry ingredients, stirring until just combined.
  4. Slowly pour in the hot water while stirring. The batter will be thin—don’t worry, that’s normal!
  5. Divide the batter into three bowls. Stir melted milk chocolate into one, dark chocolate into another, and white chocolate into the third. Spoon small amounts of each batter into the cupcake liners, alternating colors to create a swirl effect.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
  7. Heat the heavy cream in a small saucepan over medium heat until steaming. Pour it over the dark chocolate chips in a heatproof bowl. Let sit for 5 minutes, then stir until smooth.
  8. Use a piping bag or spoon to add ganache to the center of each cupcake. To do this, gently cut a small hole in the top of each cupcake and fill with ganache.
  9. Decorate with chocolate shavings, sprinkles, or mini chocolate chips for extra flair!
