  • 1 cup (120g) all-purpose flour
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) unsalted butter, cold and cubed
  • Pinch of salt
  • 8 oz (225g) cream cheese, softened
  • 1/3 cup (65g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1/4 cup (60ml) sour cream
  • 3/4 cup (120g) fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine flour, sugar, and salt. Add cold cubed butter and pulse in a food processor until mixture resembles coarse crumbs. Press about a teaspoon of crust mixture into each cup of a mini muffin tin. Bake for 8-10 minutes until lightly golden. Let cool.
  2. Make the strawberry swirl by blending chopped strawberries, sugar, and lemon juice until smooth but slightly textured. Set aside.
  3. Beat softened cream cheese with sugar until smooth. Add egg and vanilla extract, beating until combined. Fold in sour cream gently.
  4. Spoon a tablespoon of cheesecake batter into each crust-lined cup. Drop about 1/2 teaspoon of strawberry puree onto the batter and swirl gently with a toothpick or skewer to create a marbled effect.
  5. Bake for 18-22 minutes until cheesecake filling is set but slightly jiggly in the center and edges are lightly golden.
  6. Cool to room temperature, then refrigerate for at least 2 hours or overnight to firm up.
  7. Run a knife around edges to loosen and gently remove from tin. Serve chilled or at room temperature.

Notes

Use cold butter for a flaky crust. Swirl strawberry puree gently to keep distinct colors. Avoid overbaking to maintain creamy texture. Chill at least 2 hours for best results. Frozen strawberries can be used if thawed and drained. For gluten-free, substitute almond flour. For dairy-free, use vegan cream cheese and coconut sour cream.
