  • 2 medium potatoes, peeled and cubed
  • 1 can (14.5 oz) diced tomatoes (fire-roasted optional)
  • 4 cups vegetable broth (low-sodium preferred)
  • 1 medium zucchini, diced
  • 1 cup green beans, trimmed and cut into bite-sized pieces
  • 1 cup frozen peas
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat the oil: Add two tablespoons of olive oil to a large pot over medium heat. Let it warm up for about a minute.
  2. Sauté aromatics: Add the chopped onion and minced garlic to the pot. Cook for 3-4 minutes until softened and fragrant, stirring occasionally.
  3. Add harder veggies: Toss in the carrots, celery, and potatoes. Stir and let them cook for 5 minutes to develop their flavors.
  4. Add tomatoes and broth: Pour in the canned diced tomatoes and vegetable broth. Stir to combine.
  5. Season: Add a tablespoon of Italian seasoning, along with salt and pepper to taste. Bring the soup to a gentle boil.
  6. Simmer: Lower the heat, cover the pot, and let the soup simmer for 20 minutes, or until the potatoes are fork-tender.
  7. Add softer veggies: Stir in the diced zucchini, green beans, and frozen peas. Simmer for another 10 minutes until all the vegetables are tender.
  8. Taste & adjust: Taste the soup and adjust the seasoning if needed. Add more salt, pepper, or herbs to your liking.
  9. Serve: Ladle the soup into bowls and garnish with fresh parsley if desired. Enjoy hot!
