A sweet and indulgent twist on classic focaccia, filled with jam and topped with a cinnamon-sugar glaze. Perfect for brunch, dessert, or a sweet snack.

  • 3 1/2 cups (440g) all-purpose flour
  • 2 tsp salt
  • 1 tbsp sugar
  • 1 packet (2 1/4 tsp) instant yeast
  • 1 1/4 cups (300ml) warm water
  • 1/4 cup (60ml) olive oil
  • 1 cup (250g) strawberry jam (or your favorite flavor)
  • 1/4 cup (50g) granulated sugar
  • 1 tsp cinnamon
  • 2 tbsp melted butter

Instructions

  1. In a large mixing bowl, combine the flour, salt, sugar, and yeast. Add the warm water and olive oil, then mix until a shaggy dough forms.
  2. Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. If it’s too sticky, sprinkle a bit more flour.
  3. Place the dough in a lightly oiled bowl, cover with a clean towel, and let it rise for 1 hour or until doubled in size.
  4. Punch down the dough and roll it out into a rectangle. Transfer to your greased baking pan and press it gently to fill the pan.
  5. Using a spoon, dollop the jam evenly across the dough. Press the jam gently into the surface without tearing the dough.
  6. Cover the pan and let the dough rest for another 30 minutes. Preheat your oven to 375°F (190°C).
  7. Bake for 25-30 minutes, or until golden brown on top and cooked through. Let cool slightly before adding the topping.
  8. Mix the sugar and cinnamon in a small bowl. Brush the melted butter over the focaccia, then sprinkle the cinnamon-sugar mixture evenly on top.
  9. Slice into squares and serve warm, or let cool completely before storing.

Notes

Use warm water around 110°F for the yeast. Avoid overloading the dough with jam to prevent tearing. Brush the butter on while the focaccia is still warm for better cinnamon-sugar adhesion.
