Juicy boneless skinless chicken thighs cooked in the oven are a quick, easy, and flavorful recipe perfect for busy weeknights or lazy weekends.

Ingredients

Scale
  • 68 boneless skinless chicken thighs, trimmed of excess fat
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon onion powder
  • 2 tablespoons lemon juice

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking dish or sheet pan with aluminum foil for easy cleanup.
  2. Pat the boneless skinless chicken thighs dry with paper towels to remove excess moisture.
  3. In a small bowl, combine garlic powder, paprika, dried oregano, salt, black pepper, and onion powder.
  4. Place the chicken thighs in a large mixing bowl. Drizzle olive oil over them and toss to coat. Sprinkle the seasoning mixture evenly over the chicken.
  5. Squeeze lemon juice over the seasoned chicken.
  6. Lay the thighs flat in your prepared baking dish, ensuring they’re not overlapping.
  7. Bake in the preheated oven for 20-25 minutes, flipping the chicken thighs halfway through.
  8. Use a meat thermometer to check that the internal temperature reaches 165°F (74°C). Alternatively, pierce the thickest part of a thigh to ensure clear juices run out.
  9. Remove the chicken from the oven and let it rest for 5 minutes before serving.

Notes

[‘Patting the chicken dry ensures better seasoning adhesion and prevents soggy thighs.’, ‘Let the chicken sit at room temperature for 15 minutes before cooking for even results.’, ‘Space out the thighs in the pan to ensure even roasting and a golden crust.’, ‘Let the chicken rest for 5 minutes after cooking to lock in juices.’]
