  • 1 lb (450 g) ground turkey (preferably lean, but not extra lean for best moisture)
  • 1/4 cup (30 g) plain breadcrumbs (panko recommended)
  • 2 tbsp extra virgin olive oil
  • 2 cloves garlic, finely minced
  • 2 tbsp fresh dill, chopped (or 1 tsp dried dill)
  • 1 tbsp fresh mint, chopped (optional)
  • 1/2 tsp ground cumin
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 1 cup (240 g) Greek yogurt (full-fat)
  • 1/2 cucumber, peeled and grated (excess moisture squeezed out)
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh dill, chopped
  • Salt to taste
  • 1/3 cup (50 g) crumbled feta cheese
  • 4 burger buns (brioche or whole wheat, toasted if desired)
  • Optional: sliced red onions, tomato slices, or lettuce leaves

Instructions

  1. Prepare the tzatziki by grating the cucumber and squeezing out excess water. In a small bowl, combine Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, and a pinch of salt. Mix well and refrigerate.
  2. In a large bowl, combine ground turkey, breadcrumbs, minced garlic, chopped dill, mint, cumin, paprika, olive oil, salt, and pepper. Mix gently but thoroughly without overworking.
  3. Divide the mixture into 4 equal portions and shape each into a round patty about 3/4 inch thick. Press the center lightly with your thumb to prevent puffing during cooking.
  4. Heat a non-stick skillet or grill pan over medium-high heat and lightly oil the surface. Cook patties for 5-6 minutes per side until internal temperature reaches 165°F (74°C) and a golden crust forms. Avoid pressing the patties.
  5. While burgers cook, slice and toast the buns for 1-2 minutes until golden and slightly crisp.
  6. Assemble the burgers by spreading tzatziki on the bottom bun, placing the turkey patty on top, sprinkling crumbled feta, and adding optional toppings. Cap with the top bun.
  7. Serve immediately, optionally with fries or a fresh salad.

Notes

For gluten-free, substitute breadcrumbs with almond flour or gluten-free crumbs. For dairy-free tzatziki, use coconut yogurt and skip or replace feta with vegan cheese. Chill patties for 10 minutes before cooking to help them hold together. Use a meat thermometer to ensure proper cooking. Avoid pressing patties while cooking to keep them juicy.
