  • 1 lb lean ground beef
  • 6 slices thick-cut bacon, diced
  • 3 medium russet potatoes, peeled and diced
  • 1 small yellow onion, finely chopped
  • 2 medium carrots, grated
  • 3 cloves garlic, minced
  • 4 cups chicken broth (low-sodium preferred)
  • 1 cup heavy cream
  • 2 cups freshly shredded sharp cheddar cheese
  • 1/2 cup diced dill pickles
  • 2 tablespoons yellow mustard
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, green onions, sour cream

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add diced bacon and cook until crispy, stirring occasionally. Remove bacon and set aside on a paper towel to drain. Leave about 2 tablespoons of bacon grease in the pot.
  2. Add the ground beef to the pot with the bacon grease and cook until browned, breaking it into small pieces as it cooks. Season lightly with salt and pepper. Remove the cooked beef and set aside.
  3. In the same pot, add the chopped onion, grated carrots, and minced garlic. Sauté until softened and fragrant, about 5 minutes.
  4. Add the diced potatoes and chicken broth to the pot. Bring the mixture to a boil, then reduce the heat to medium-low and cover. Simmer for 15-20 minutes, or until the potatoes are tender.
  5. While the soup is simmering, shred the cheddar cheese and dice the dill pickles. Set these aside for later.
  6. Once the potatoes are cooked, use a wooden spoon to lightly mash some of them to help thicken the soup. Add the cooked ground beef and crispy bacon back into the pot.
  7. Pour in the heavy cream and stir well. Add the shredded cheddar cheese a handful at a time, stirring constantly until melted and smooth.
  8. Stir in the diced pickles and mustard. Let the soup simmer for an additional 5 minutes to allow the flavors to meld together.
  9. Taste and adjust seasoning with additional salt and pepper, if needed. If the soup is too thick, add a splash of chicken broth to thin it out to your desired consistency.
  10. Serve hot with your favorite toppings, such as extra shredded cheese, green onions, or a side of crusty bread.
