  • 2 tablespoons toasted sesame oil
  • 1 cup shredded carrots
  • 1 cup snap peas or snow peas
  • 1 cup thinly sliced bell peppers
  • 1 cup sliced shiitake or button mushrooms
  • 23 green onions, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger
  • 3 tablespoons light soy sauce or tamari (for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon brown sugar or honey (optional)
  • Optional toppings: toasted sesame seeds, chopped cilantro, crushed peanuts

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 oz (225 g) of longevity noodles and cook according to package instructions (3-5 minutes for fresh noodles, 7-9 minutes for dried). Stir occasionally to prevent sticking.
  2. Drain and rinse noodles under cold water to stop cooking and keep them from sticking. Drizzle with 1 tablespoon toasted sesame oil and gently toss. Set aside.
  3. Wash and chop all vegetables as listed. Thinly slice carrots and bell peppers. Mince garlic and grate ginger.
  4. Heat 1 tablespoon toasted sesame oil in a wok or large nonstick skillet over medium-high heat until shimmering.
  5. Add minced garlic and grated ginger. Stir for 30 seconds until fragrant but not burned.
  6. Add carrots, snap peas, bell peppers, and mushrooms. Stir-fry continuously for 4-5 minutes until vegetables are tender-crisp.
  7. If pan looks dry, add a splash of water or broth to help steam veggies and prevent burning.
  8. Add the noodles to the wok with vegetables. Pour in 3 tablespoons light soy sauce, 1 tablespoon rice vinegar, and 1 teaspoon brown sugar or honey.
  9. Use tongs or chopsticks to gently toss everything together, coating the noodles evenly.
  10. Add chopped green onions and stir for another minute. Remove from heat.
  11. Transfer to serving plates and sprinkle with toasted sesame seeds, cilantro, or crushed peanuts if desired. Serve warm.

Notes

Do not overcook noodles; they should be tender but springy. Use high heat for stir-frying and keep stirring to avoid burning garlic and vegetables. Toss noodles gently with sesame oil after cooking to prevent sticking. Adjust soy sauce seasoning at the end to taste. Add a splash of water or broth if vegetables start to burn.
