These luxurious chocolate dipped strawberries with a shimmering gold finish are an elegant and easy homemade treat perfect for special occasions.

Ingredients

Scale
  • 20 medium-sized fresh strawberries, firm and ripe
  • 8 ounces (225g) high-quality dark chocolate (at least 70% cocoa)
  • 4 ounces (115g) white chocolate (for drizzle)
  • 1 tablespoon (15ml) coconut oil or vegetable oil (optional, for smooth glossy finish)
  • Edible gold dust or gold leaf (food-grade)
  • Parchment paper or silicone baking mat (for setting dipped strawberries)

Instructions

  1. Gently wash about 20 medium-sized strawberries and pat them completely dry with a clean towel. Leave the green stems on for easier dipping. (Prep time: 10 minutes)
  2. Set up a double boiler by placing a heatproof bowl over a pot of simmering water. Add 8 ounces (225g) of dark chocolate and 1 tablespoon (15ml) of coconut oil. Stir frequently until smooth and glossy. Alternatively, melt in microwave in 20-second intervals, stirring in between. (Cook time: 5-7 minutes)
  3. Holding the strawberry by the stem, dip it into the melted chocolate, swirling to coat about three-quarters of the berry. Let excess chocolate drip back into the bowl. Place the dipped berry on parchment paper or silicone mat. Repeat for all strawberries. (Time: 10 minutes)
  4. Place the dipped strawberries in the fridge for 15-20 minutes or until the chocolate hardens. (Time: 20 minutes)
  5. Melt 4 ounces (115g) of white chocolate using the same method as dark chocolate until smooth.
  6. Using a fork or spoon, drizzle the white chocolate artistically over the set dark chocolate strawberries. (Time: 5 minutes)
  7. Before the white chocolate fully hardens, use a soft pastry brush to lightly apply edible gold dust on parts of the dipped strawberries. Use a gentle hand for a delicate shimmer. (Time: 5 minutes)
  8. Return the strawberries to the fridge for another 10 minutes to set the drizzle and gold dust completely. (Time: 10 minutes)
  9. Bring the strawberries to room temperature (60-65°F / 15-18°C) before serving for best flavor and texture. (Time: 5 minutes)

Notes

Ensure strawberries are completely dry before dipping to prevent chocolate from seizing. Use coconut oil in chocolate for a smooth, glossy finish. Chill dipped strawberries promptly to keep chocolate shell crisp. Apply edible gold dust gently to avoid overwhelming the look. Store in refrigerator for 2-3 days; bring to room temperature before serving.
