This marinated tomatoes recipe is a simple yet flavorful dish that showcases the natural sweetness of ripe tomatoes infused with garlic, herbs, and a tangy vinaigrette.

  • Ripe, firm tomatoes (cherry, grape, or heirloom varieties)
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 clove garlic, minced
  • Fresh basil leaves
  • Salt, to taste
  • Black pepper, to taste
  • Optional: Chili flakes or a sprinkle of sugar

Instructions

  1. Wash the tomatoes thoroughly and pat them dry. Slice them into rounds or halves, depending on their size.
  2. In a mixing bowl, whisk together olive oil, red wine vinegar, and minced garlic. Add a pinch of salt and freshly ground black pepper to taste.
  3. Tear fresh basil leaves into small pieces and stir them into the marinade. Add chili flakes if desired.
  4. Place the sliced tomatoes into the bowl and gently toss them until fully coated in the marinade.
  5. Transfer the tomatoes to a storage container and let them marinate in the fridge for at least 30 minutes, or up to 24 hours for deeper flavor.
  6. Remove the tomatoes from the fridge and bring them to room temperature for 10 minutes before serving. Garnish with extra basil and a drizzle of olive oil.

Notes

For best flavor, let the tomatoes marinate overnight. Use the leftover marinade as a salad dressing or bread dip.
