Transfer to a paper towel-lined plate to drain and cool. Once cooled, crumble into small pieces. (Tip: Save a bit of the bacon grease for cooking green onions if you want extra flavor.)
  2. Mix creamy base: In a mixing bowl, combine 8 oz softened cream cheese, 1 cup sour cream, and ½ cup mayonnaise. Use a hand mixer or whisk to blend until smooth and creamy, about 2-3 minutes.
  3. Add cheese and seasonings: Stir in 1 cup shredded sharp cheddar cheese, 1 tsp garlic powder, 1 tsp onion powder, ½ tsp freshly ground black pepper, and a pinch of salt. Mix gently but thoroughly.
