These no-bake Monster Cookie Energy Balls are a quick and easy snack packed with peanut butter, oats, chocolate chips, and candy-coated chocolates. Perfect for busy afternoons, road trips, or post-workout bites.

  • 1 cup (90g) old-fashioned oats
  • 1/2 cup (120g) peanut butter
  • 1/4 cup (85g) honey
  • 1/4 cup (40g) mini chocolate chips
  • 1/4 cup (40g) candy-coated chocolates
  • 2 tablespoons (15g) ground flaxseed
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large mixing bowl, combine old-fashioned oats, peanut butter, honey, mini chocolate chips, candy-coated chocolates, ground flaxseed, vanilla extract, and a pinch of salt.
  2. Using a wooden spoon or spatula, stir the mixture until everything is well combined. It should be thick and slightly sticky.
  3. Take about 1 1/2 tablespoons of the mixture and roll it into a ball using your hands. Repeat until all the mixture is used—this recipe makes approximately 15 energy balls.
  4. Place the energy balls on a baking sheet or plate and chill them in the refrigerator for at least 30 minutes to set.
  5. Once chilled, store the energy balls in an airtight container in the fridge for up to a week or freeze for longer storage.

Notes

If the mixture feels too dry to roll, add an extra tablespoon of peanut butter or honey. If it’s too wet, sprinkle in more oats. Wet your hands slightly to prevent sticking while rolling the balls.
