  • 2 fresh peaches, peeled and diced into small chunks (or canned peaches, drained)
  • 1/2 cup unsalted butter, softened to room temperature
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Peel and dice the peaches into small chunks. Set aside.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In a large mixing bowl, use a hand mixer to beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2 minutes).
  4. Beat in the egg and vanilla extract until fully combined.
  5. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined.
  6. Gently stir the diced peaches into the dough using a spatula.
  7. Cover the bowl with plastic wrap and chill the dough for at least 30 minutes.
  8. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  9. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 12–14 minutes, or until the edges are golden and the center looks set.
  11. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
