  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, peanut butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the bowl and beat until well combined.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing.
  6. Use a cookie scoop or tablespoon to portion out the dough. Roll each scoop into a ball and place it on the prepared baking sheets, leaving about 2 inches between each cookie.
  7. Use a fork to gently press down each ball, creating a criss-cross pattern on top.
  8. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are set but the centers are still soft. Do not overbake.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a cooling rack.

Notes

For best results, use room temperature ingredients and avoid overmixing the dough. If the dough feels sticky, chill it in the fridge for 30 minutes before shaping.
