These irresistible peppermint chocolate chip cookies combine cool peppermint and rich chocolate in a soft, chewy cookie, perfect for sharing during the holidays.

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon peppermint extract
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1/2 cup crushed peppermint candies

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a large bowl, cream the softened butter, granulated sugar, and brown sugar until fluffy (about 2 minutes). Add the eggs, vanilla extract, and peppermint extract, and mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Avoid overmixing to keep the cookies soft.
  5. Fold in the chocolate chips and half of the crushed peppermint candies using a spatula.
  6. Scoop the dough into 1.5-tablespoon balls and place them on the prepared baking sheets, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden but the centers still look soft.
  8. Allow the cookies to cool for 5 minutes on the baking sheet, then transfer to a cooling rack. Sprinkle the remaining crushed peppermint candies on top while the cookies are still slightly warm.

Notes

Don’t overbake the cookies; pull them out when the centers look slightly underdone as they’ll firm up while cooling. Chill the dough for 30 minutes if it feels too soft to prevent spreading during baking.
