Instructions

  1. Prep the caramelized onions: Heat 2 tablespoons butter or olive oil in a skillet over medium heat. Add 2 thinly sliced yellow onions and a pinch of salt. Stir occasionally for 20-25 minutes until golden and soft. In the last 5 minutes, add 1 teaspoon brown sugar and ½ teaspoon smoked paprika. Set aside.
  2. Make the tangy slaw: In a mixing bowl, combine 2 cups shredded cabbage and 1 cup grated carrots. In a small bowl, whisk 3 tablespoons apple cider vinegar, 1 tablespoon honey, 1 teaspoon Dijon mustard, salt, and pepper. Pour dressing over cabbage mixture and toss well. Let sit for 10-15 minutes.
  3. Prepare the spicy avocado topping: Mash 2 ripe avocados with juice of 1 lime, 1 finely chopped jalapeño (seeds removed for less heat), chopped cilantro, salt, and pepper. Keep chilled until serving.
  4. Grill the hot dogs: Preheat grill to medium-high (about 375°F/190°C). Grill hot dogs for 5-7 minutes, turning every couple of minutes until charred and heated through. Optionally, toast buns on grill for 1-2 minutes.
  5. Set up the hot dog bar: Arrange grilled hot dogs, buns, and toppings in separate bowls or platters with spoons or tongs for guests to customize their own.
