  • Caramelized onions (2 large yellow onions, sliced and slowly cooked)
  • Pickled red onions (1 medium red onion, thinly sliced, pickled in 1 cup white vinegar, 1 tbsp sugar, 1 tsp salt)
  • Jalapeño slices (fresh or pickled)
  • Shredded sharp cheddar cheese
  • Avocado mash (1 ripe avocado mashed with juice of half a lime and pinch of salt)
  • Crispy shallots
  • Fresh chopped cilantro
  • Chipotle mayo (½ cup mayonnaise mixed with 1 tsp chipotle chili powder, 1 tsp lime juice, pinch of salt)
  • Classic yellow mustard
  • Ketchup
  • Sweet BBQ sauce
  • Relish (sweet pickle relish)

Instructions

  1. Caramelize the onions: Slice 2 large yellow onions thinly. Heat 2 tablespoons olive oil in a skillet over medium-low heat. Add onions and a pinch of salt. Stir occasionally and cook slowly until golden and sweet, about 30-35 minutes.
  2. Pickle the red onions: Thinly slice one medium red onion. Mix 1 cup white vinegar, 1 tablespoon sugar, and 1 teaspoon salt until dissolved. Submerge onions in the mixture and let sit for at least 30 minutes.
  3. Prepare chipotle mayo: Combine ½ cup mayonnaise with 1 teaspoon chipotle chili powder, 1 teaspoon lime juice, and a pinch of salt. Adjust spice level to taste.
  4. Mash the avocado: Peel and pit 1 ripe avocado. Mash with juice of half a lime and a pinch of salt. Cover to prevent browning.
  5. Grill the hot dogs: Preheat grill or grill pan to medium-high. Grill hot dogs, turning every 2-3 minutes until evenly charred and heated through, about 10 minutes. Internal temperature should reach 160°F.
  6. Warm the buns (optional): Toast buns lightly on the grill for 2-3 minutes for extra texture and flavor.
  7. Set up the hot dog bar: Arrange buns, hot dogs, toppings (caramelized onions, pickled onions, jalapeños, shredded cheese, avocado mash, crispy shallots, cilantro), and sauces (chipotle mayo, mustard, ketchup, BBQ, relish) on a serving table. Provide tongs and spoons for guests to build their own hot dogs.

Notes

Keep sauces chilled until serving and replenish toppings as needed. Reheat caramelized onions gently if they cool and firm up. Prepare pickled onions and sauces a day ahead to save time. Toast buns lightly to prevent sogginess. Avoid overcrowding the bar with too many toppings to maintain flow.
